This is a wonderfully healthy dish that can be prepared in advance.
Ingredients
- 1 1/2lb Roma tomatoes
- 1/3 cup sweet onion
- 2 large garlic cloves
- 1/4 cup fresh basil
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
Directions

| Finely dice the tomatoes and place in collander to drain | |

| In food processor, blend all other ingredients | |
| Step 3 | |
| Fold diced tomatoes into the other ingredients | |
| Step 4 | |
| Add salt & pepper to taste | |

| Spoon onto toasted baguette slices (melted mozzarella optional) | |
