Chino Valley Farms Bruschetta

This is a wonderfully healthy dish that can be prepared in advance.

Ingredients

  • 1 1/2lb Roma tomatoes
  • 1/3 cup sweet onion
  • 2 large garlic cloves
  • 1/4 cup fresh basil
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar

Directions

Step 1
Finely dice the tomatoes and place in collander to drain
Step 2
In food processor, blend all other ingredients
Step 3
Fold diced tomatoes into the other ingredients
Step 4
Add salt & pepper to taste
Step 5
Spoon onto toasted baguette slices (melted mozzarella optional)
